It's that time of the year, again....Girl Scout Cookies!! Who can resist those delicious cookies, or the darling girls they represent? Dinner's Ready was excited to participate in the second annual (local) Desserts First, a benefit for the Kentuckiana Girl Scout Program. We made luscious truffles using (what else?)....Girl Scout Cookies!! We're printing our recipes below, with the ingredients we chose for the evening. We hope you try them in your kitchen (and purchase lots of Girl Scout Cookies!).
Trefoil Truffles
Ingredients
1 ½ cups toasted Nuts (pecans, almonds, or walnuts)
1-1/4 cup Trefoils, finely crushed
½ cup Powdered Sugar
2 TB Cocoa, optional
2 TB Syrup, Molasses or Corn Syrup
1/4 cup Liquor of your choice
Powdered Sugar to roll
Directions
Toast nuts in oven and allow to cool. Crush finely in food processor. Transfer to a bowl. Mix in Trefoils (finely crush cookies then measure). Add ½ cup powdered sugar and (if using) cocoa. Combine syrup of you choice and liquor of your choice. Add to mixture and combine. Roll into 1" balls and toss in powdered sugar. Cover and store in frig. Bring to room temperature to serve. Makes approximately 2 ½ Dozen
We had fun with this one! Some of the truffles were made with toasted (don't skip this step!) almonds, light corn syrup, and a combination of rum and Grand Marnier (an orange flavored liquior). In others, we used cocoa, toasted pecans, molasses and either Makers Mark or Southern Comfort. These were our "grown-up" version of Girl Scout Cookies (and melt-in-your-mouth delicious)!
Do-si-dos Truffles
Ingredients
4 oz Cream Cheese, softened
½ cup Peanut Butter
1 pkg Do-si-dos, crushed
8 oz Chocolate Almond Bark, melted
Tagalongs, crushed
Directions
In a food processor, finely crush Do si dos Girl Scout Cookies. With an electric mixer, combine cream cheese and peanut butter until well blended. Add crushed Do si dos and mix on low speed until thoroughly combined. Roll into 1" balls. Cover and refrigerate for at least 1 hour.
Melt Chocolate Almond Bark according to package directions. Dip truffles and place on wax paper lined sheet. Immediately roll in, or sprinkle with, Tagalong Girl Scout Cookies.
Instead of dipping in chocolate, we rolled some of our truffles in crushed Trefoils. Each variety was scrumptious!
Chill. Makes Approximately 2 ½ Dozen
